It is almost the end of apple season in Finland, but we still have fresh lobo apples from our backyard that are waiting to be harvested. Lobo apples are uniquely tart and juicy, making them perfect for both eating fresh and baking into delicious desserts. As the frost begins to set in, I decided to enjoy these crisp fruits, turning them into cakes and pies perfect for an afternoon and evening snack or as a visiting present.
I am no expert baker but these days you can easily make something delicious from various recipes online. This time, I follow this French Apple Cake recipe . The following ingredients are needed.
INGREDIENTS
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, at room temperature
- ⅔ cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 3 tablespoons dark rum
- 2-3 baking apples, peeled, cored and cut into cubes
- Confectioners’ sugar (optional), for decorating cake
INSTRUCTION
- Preheat the oven to 350°F (175°C) and set an oven rack in the middle position. Grease a 9-inch (23-cm) springform or regular cake pan with butter or nonstick cooking spray. I use a detachable round baking tray and laid the baking parchment on the base and greased it with butter.
- In a small bowl, whisk together the flour, baking powder and salt.
- Mix butter and sugar until foamy then add one by one the eggs. Add the vanilla and rum. Add the flour mixture and mix until just combined. Using a rubber spatula, fold in the chopped apples.
- Put the batter into the baking tray and even the top. Sprinkle on top with granulated sugar. Bake for about 35-40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean. Allow the cake to cool for about an hour or more. I put my cake in the cold balcony fresh from the oven. Cake can be served warm or room temperature, plain or with lightly sweetened whipped cream or vanilla ice cream.
