Salmon soup, known as lohikeitto in Finnish, has a significant place in Finland’s culinary tradition. Its roots can be traced back to the ancient fishing culture of the country, where salmon was abundant in the rivers and coastal waters.
Over time, this hearty and flavorful soup became a staple dish in Finnish households, especially in coastal regions. The traditional recipe typically includes salmon, potatoes, leeks, carrots, and sometimes cream, creating a rich and creamy texture. Salmon soup is often enjoyed during festive occasions and is a symbol of Finnish hospitality. Its enduring popularity has solidified its status as a beloved national dish, cherished for its comforting warmth and delicious blend of flavors.
In Finland, it is very common to find Salmon soup wherever there is an outdoor activity – markets and bazaars to say the least.
This soup recipe is taken from the book NORTHERN FLAVORS by Anna Maija Tanttu, published in 2007.
How to Cook Salmon Soup
Ingredients for salmon soup:
- 1Liter fish stock
- 1 onion whole cut into cubes ( you can also use leeks better)
- 3-4 regular size potatoes cut into cubes
- 8 black pepper corns
- 1 cup water
- 500grams of salmon- sliced into cubes with skin off
- salt at your preference
- 1 cup cream or milk
- 2 tbsp. flour
- around 1/3 cup dill – adjust freely at your preference
- butter
Instruction:
- Peel and cut potatoes and carrots into cubes.
- Slice onions or slice leeks into strips
- Heat the fish stock ( you can also add some parts of the fish) and add the pepper corns, potatoes, carrots, onions or leeks and boil for about 15 minutes.
- Add the fish cubes and cook for about 10 minutes.
- Add the flour to the cream or milk and stir into the soup.
- Cook on low heat for about 5-10 minutes
- Test for saltiness, add according to your preference
- Sprinkle the dill last and serve immediately
