Finnish blueberry pie, also known as mustikkapiirakka, is a traditional dessert in Finland. It typically features a buttery crust filled with a mixture of fresh or frozen blueberries, sugar, and sometimes a hint of cinnamon. The top of the pie may be left open or covered with a lattice of crust. This dish popular and easy to make in addition to being cheap due to the fact that blueberries are free to pick in the Finnish forests in Autumn.
The Ingredients
For the pastry:
2 Eggs
2.1 cups flour
2 tsp. baking powder
200 grams butter/margarine-whichever you like
1cup sugar – or lesser if you like it not so sweet
milk – optional if you wanna make your pastry soft
For the topping/ filling
1 Egg
1.6 cups flour
2 tsp. baking powder
200 grams kermavilli or sour cream in English
1/2 cup sugar
2 tsp vanilla sugar
Preparation and cooking
- Warm oven to 200°C in blower setting. While waiting, mix sugar, butter or margarine with a mixer and slowly add egg 1 at a time.
- Mix flour and baking powder well and slowly pour to wet ingredients * see #1 *. Add milk as an option if you think the pastry is dry and a bit hard to mix or spread. Add 1 tbsp at a time if you wish, until desired mixture texture.
- Prepare baking tin. Spread tin with butter and arrange baking paper on it.
- Spread the mixture onto the tin evenly until it covers all sides.
- Pour the frozen berries evenly on top of the pastry and cover with filling.
- Cook for 25 minutes . Make sure you check it from time to time to avoid burning the cream.
- Let cool for 1 hour or more. The longer it has cooled down, the better it becomes.
The consistency of your mixture will vary according to the brand of the ingredients but there will be slight difference only. The outcome of your baking will also depend on the berries, whether you use frozen or fresh, the kind of oven you use. You can also use other fruits instead of blueberries. Enjoy your pie!
