Finnish fresh potatoes, also known as “uusia perunoita” in Finnish, are a popular seasonal delicacy in Finland. They are harvested during the summer months, typically from June to August.
The harvesting process begins when the potato plants have developed enough in their growth cycle and the tubers have reached the desired size. The potatoes are carefully dug out of the ground using specialized machinery or by hand.
Once harvested, Finnish fresh potatoes are known for their delicate and thin skin. They have a unique flavor and a creamy texture, making them perfect for various culinary preparations. One of the most common ways to enjoy them is by boiling or steaming them until tender. The potatoes can then be served as a side dish with a sprinkle of salt and a knob of butter.
The light and fresh taste of fresh potatoes pairs well with a variety of dishes, from grilled meats to fish. Most of the time, the fresh potatoes are paired with “silli” perhaps better known outside Finland as the pickled fish. They are often used as a key ingredient in traditional Finnish dishes such as “perunamuusi” (mashed potatoes) and “perunasalaatti” (potato salad). These potatoes are highly valued for their earthy flavor and are a cherished part of Finnish cuisine during the summer harvest season.

Ingredients and Preparation
- Gather the ingredients:
- Fresh potatoes
- Fresh onions
- Pickled fish (of your choice)
- Wash the fresh potatoes thoroughly to remove any dirt or debris. If desired, peel the potatoes, however I suggest that you dont peel the potato, rather clean with a potato by brushing to brush off the skin.
- Dice the fresh onions into small, uniform pieces. Set aside.
- In a pot, bring water to a boil. Add the potatoes and cook until they are tender when pierced with a fork or knife. This typically takes around 15-20 minutes, depending on the size of the potatoes. Drain the cooked potatoes and set them aside.
- In a separate pan, heat a small amount of oil or butter over medium heat. Add the diced fresh onions and sauté until they become translucent and slightly browned.
- Cut the pickled fish into bite-sized pieces. If the fish has bones, be sure to remove them.
- Once the onions are cooked, add the pickled fish to the pan and gently stir. Cook for a few more minutes until the fish is heated through.
- Add the cooked potatoes to the pan with the onions and fish. Toss gently to combine all the ingredients and allow them to heat through together for a few more minutes.
- Season with salt, pepper, or any additional spices or herbs of your choice to taste.
- Remove from heat and serve the fresh potatoes with onions and pickled fish as a delicious and flavorful meal.
Enjoy your meal!
