What to do with your fresh potato harvest?
This time of the year in Finland potatoes and grains are harvested for winter consumption. In the summer time, we managed to plant some potatoes in our small farm land where we also plant different kinds of vegetables for consumption. Our potatoes are smaller compared to the ones being sold in the market, but this is not a worry for me because they are organic. We never fertilized or put chemicals on the field to kill the weeds, so basically they are chemical free potatoes. Small potatoes are not valued by many for food, but personally I like them due to their flavor, to me it is tasty and softer than the big ones. Anyway, so in order to make use of these baby or small potatoes, I baked them whole in the oven with the skin on.
Today, I tried baked potato following the recipe I got online from this link. I am not good at cooking but I am trying to learn from others. This recipe is simple to make and it makes use of our fresh and organic potatoes. Copying from the link, below is the recipe and the instruction.

Baked Potatoes with meat is one of Finnish’ traditional food. Potato is a staple food in Finland therefore it is not a surprise to see vast potato fields in many areas across the country.

Ingredients
- 800g
- 350 – 400 g minced beef * modified
- 1 large onion – sliced thinly
- enough salt according to your taste preference.
- optional other spices –
- 5 dl whole milk (I used lactose-free)
- 2 tablespoons of wheat flour
Instruction
Layer the potato and raw meat slices in a flat baking dish. Season the meat layer with salt and pepper, and also arrange the onions on top of the meat. Additionally, you may incorporate other spices as desired. Place another layer of potatoes on top. Combine the milk and wheat flour and carefully pour the mixture into the pan. Sprinkle a moderate amount of spices over the potato layer. Proceed to bake the dish in the oven at 200 degrees for one hour, and then reduce the temperature to 175 degrees, allowing the dish to simmer for at least another 30 minutes, preferably longer. If needed, cover the pan with foil. However, many individuals consider the crisp, dark fried potato slices to be the highlight of this dish.
